Corn Dish

Side-dish recipes with refried beans and corn?

I have a kitchen project I have to do today, and you need to do food from the southwest. I already have a main course, dessert and a salad, but I need a side dish. I thought something with corn, refried beans, tomatoes and green pepper, perhaps? Does anyone have recipies using one of the above ingredients? Thank you!

Mexican fried corn * 2 tablespoons olive oil * 1 small onion, finely chopped * 1 / 2 small green pepper, chopped thinly sliced * 1 / 2 small red bell pepper, cut into thin slices * 2 tablespoons chopped cilantro * 1 hot green pepper, seeded and chopped finely * 1 3 / 4 cups whole kernel corn * 4 ounces mushrooms, sliced * salt and black pepper * 8 sprigs fresh cilantro, for garnish Directions Heat oil in a heavy skillet over medium heat. Add onion, peppers, cilantro and Chile. Cook 5 minutes, stirring occasionally time or until tender. Stir in corn, mushrooms, salt and pepper. Cook 5 minutes, stirring occasionally. Transfer to a serving dish hot and garnish with coriander.
